- - Summary of audio segment: "Had chicken ribs, chicken gizzards, chicken livers, I had everything but the chicken, chicken necks, I used to sell like crazy the chicken necks." Then I started selling fish and one day I saw fish ribs in a market that were going to be thrown away and I took it and the fish heads. Fish ribs sold like hotcakes; heads sold, too. People could buy them for a dollar and have something to eat; get that? Something to Eat. It was a trip. Every time I had something new, I took some to a bar to try it out; that's how I'd put my product out; I had to hustle. "I wouldn't touch a chicken. All I sold were the innards and the ends -- chicken livers, chicken hearts." The gizzards are where I made the money; I did this before the others; the spice is what made it. They still ask me for those gizzards. No one else had a restaurant that sold Chinese fried rice and lasagna in the same place. I used to make Mexican foor too; on Madison between 10th and 9th.
