The earliest collection of recipes that has survived in Europe is De re coquinaria, written in Latin. An early version was first compiled sometime in the 1st century and has often been attributed to the Roman gourmand Marcus Gavius Apicius, though this has been cast in doubt by modern research.  An “Apicius” came to designate a book of recipes.  The current text appears to have been compiled in the late 4th or early 5th century; the first print edition is from 1483.  It records a mix of ancient Greek and Roman cuisine, but with few contemporary details on preparation and cooking.

Richard Bradley’s Country Housewife and Lady’s Director (1736) is an excellent example of the English country housewife book, a split-off from the Latin “whole house” book. Other works of this genre whose intention is “to teach the farmer’s wife / With satisfaction how to live / The happy country life” include The Farmer’s Wife or the Complete Country Housewife (1780). Bradley was the first professor of botany at Cambridge and very probably the first academic luminary to prepare a cookbook. His may also be the first English recipes for pineapples and turtle soup.

French lawyer and gastronimist, Brillat-Savarin is known for this witty 1825 treatise on the art of dining. During the Reign of Terror he spent time in the U.S., teaching French and playing the violin, and returned to France in 1797 to serve as a councelor to France's Supreme Court of Appeal until his death in 1826. The body of work, though often aphoristic and axiomatic, has remained extremely important and has repeatedly been re-anaylzed through the years. Brillat-Savarin is often considered the father of the low carbohydrate diet. He considered sugar and white flower to be the cause of obesity and he suggested instead protein-rich ingredients.

Written by one of the first women to make a living by writing, was best known for her abolitionist work. The strong emphasis on the virtues of thrift, self-reliance and frugality, a continuing theme in American cookbooks, reflected her New England heritage and her concerns for the nutritional effects of the 1820s depression in the U.S. The trim, compact size as well as the subject matter made this a convenient and helpful volume for pioneer families to carry on their westward migration.

Became the most popular cookbook in England and the American colonies. The literate urban middle class were aware that fortunes were easier to ear than respectability and social status. Glasse gave them the ticket to social respectability by providing middle class women with a ticket out of the kitchen and into a life of leisure. Even if the women of London's burgeoning mercantile class could not quite replicate the life of leisure led by the gentry, they were now about to eat in the style of those much higher up the social scale. This was reflected in what they ate, and how they cooked. Georgian cooking was incredibly rich. Lashings of butter were spread on everything to meat to vegetables. It was not uncommon for a recipe to call for a dozen egg yolks or more. Nutmeg, cardamom, pepper, cloves and other strongly flavored herbs and spices were added liberally to most dishes. Glasse was also very keen on mixing sweets and savoury flavors.

This cornerstone in American cookery is the first cookbook of American authorship to be printed in the United States. Numerous recipes adapting traditional dishes by substituting Native American ingredients, such as corn, squash and pumpkin are printed here for the first time. "Pompkin Pudding," baked in a crust, is the basis for the classic American pumpkin pie. Recipes for cake-like gingerbread are the first known to recommend the use of pearl ash, the forerunner of baking powder.

Thomas Tryon viewed the human body as a miniature universe.  Influenced by the Ancients, Hinduism, and the Occult, Tryon developed a dietetic regime that focused on purifying the body and maintain a sense of cleanliness with food and the home. His was but one voice in a campaign toward self-help, encouraging the means toward health, vigor and long life.  Soon following this, the cookbook would emerge as a distinct genre, separate from the universal view of the home.

One of the earliest cookbooks written and compiled by a woman. Wecker introduces the unique discussion of the preparation of food for the sick and inform. This interest, no doubt, emerged in part because she was married to Johann Jacob Wecker, a famous medical doctor, author and translator in 16th-century Basel.
