America, North: Mexican

It's important because everybody likes it and it represents our family. When I was little my grandma taught my mom how to cook tamales and my mom taught my aunts to cook it. It was served on Christmas Eve. I remember on Christmas Eve we all sit down with our friends and cousins and we eat at 12'o clock.

3 1/2 lbs pork or chicken
4 tsp hot sauce
3 lbs masa
however many leaves of corn you want (usually about 40)
4 quarts of hot water

First you get 3 pounds of masa and pound it. Next you get leaves of corn then you put the masa in the leaves. Put on the water to 4 quarters of water and add the chicken in the masa. Fold it together and boil in the water for an hour an a half then you eat it
