Chicken Adobo

Asia, South East: Filipino

This is a very typical Filipino dish. We have it almost every week. There are many variations of the dish, but I like this one the most. This is a very easy dish to prepare. Everybody loves this, Filipinos and non-Filipinos.


Whole chicken, cut-up
1 cup vinegar
1 cup water
4 garlic cloves, crushed
2 bay leaves
1/4 cooking oil
10 peppercorn
1/4 c soy sauce


Place chicken and all the ingredients, except oil, in a pot. Cook in medium heat, uncovered, until almost all liquid has evaporated and chicken is cooked. Add cooking oil and fry chicken until brown.

Serve with rice.
