Red Beans and Rice

My name is Kelly. The reason I chose Red Beans and Rice is because it is something that my grandma has made for me all my life. It is part of something my family calls Soul Food. On Sunday the whole family comes together to eat Sunday Dinner better known as Soul Food.


1 pound Camilla Red Kindeys
1/2 pound ham or seasoning meat
8-10 cups water
1 onion chopped
1 toe garlic chopped
2 tablespoons celery chopped
2 tablespoons parsley chopped
1 large bay leaf
salt and pepper to taste


Rinse and sort beans. Render meat in skillet. Remove meat and place on side. Saute in fat in skillet, onion, garlic, parsley, and celery. Add these with meat , bay leaf, salt and pepper to beans. Boil gently, stirring occasionallyfor about 1 1/2 hours or until tender. Add water while cooking if necessary.
