8-10 cups beef stock
2-4 mashed garlic cloves
2 chopped onions
3 sliced carrots
4 celery stalks sliced or chopped
1 can of diced tomatoes
1 large bag of baby spinach
fresh or dried basil leaves
1 can of kidney beans
chopped squash.
Preparation
Bring stock to boil. Add garlic and onion, and cook for 10 minutes. Add remaining ingredients except spinach. Simmer until vegetables are tender, remove from heat, and add baby spinach topped with grated parmesan cheese and salt and pepper to taste.
