This recipe is important because my mom's grandma taught it to my mom .The dish is served on my birthday ,and special occasion when friends and family get together.
Ingredients
1 can Las Palmas enchilada sauce
1 dozen corn tortillas
1 cup of shredded cheese (half montery jack and half sharp cheddar)
1 pound ground beef
1/2 cup sliced black olives
2 tsp. cumin
1 tsp garlic
2 dashes pepper
Preparation
Step 1: brown the beef, add all seasonings. Drain fat, put aside.
Step 2: Fry corn tortillas in a skillet with oil to make them soft, not crispy. Place them on a plate lined with a paper towel to absorb excess oil.
Step 3 In a casserole dish place an open corn tortilla and add in the ground beef . Roll into a burrito and repeat until the pan is full.
Step 4: Over all of the rolled corn tortillas, pour the Las Palmas sauce. Then sprinkle grated cheese over the entire dish.
Step 5 Place in a 350 degree preheated oven until cheese is melted.
Step 6 Garnish with black olives.
