ITALIAN CHEESE CAKE

THIS IS A TRADITIONAL CHEESE CAKE RECIPE FROM NAPLES. MY MOTHER BAKED THIS TRADITIONAL DESSERT AT CHRISTMAS AND EASTER.

Ingredients

1 3 LB CAN OF RICOTTA
2 CUPS OF SUGAR
1/2 CUP OF FLOUR
1 TABLESPOON VANILLA
1 LEMON & 1 ORANGE RIND GRATED
1/2 CUP OF GRAHAM CRACKER CRUMBS
8 EGGS (SEPARATED)
3 TABLESPOONS OF AMERATO (OPTIONAL) OR
3 TABLESPOONS OF CREME DE COCOA (OPTIONAL)

Preparation

BEAT RICOTTA UNTIL SMOOTH, GRADUALLY ADDING 1-1/2 CUPS OF SUGAR AND EGG YOKES. ADD THE FLOUR, VANILLA, ORANGE & LEMON RIND AND THE OPTIONAL LIQUORS UNTIL SMOOTH. BEAT THE EGG WHITES WITH 1/2 CUP OF SUGAR. FOLD THE EGG WHITE MIXTURE INTO THE RICOTTA MIXTURE. POUR THE CONTENTS INTO A 12 INCH SPRING FORM PAN THAT HAS BEEN SPRAYED WITH NON STICK (PAM) AND SPRINKLED WITH THE GRAHAM CRACKER CRUMB. BAKE IN A 425 DEG OVEN FOR 10 MINUTES. LOWER THE TEMPERATURE TO 350 DEGREES AND BAKE FOR 1 HOUR, TURN OFF OVEN AND ALLOW TO COOL IN THE OVEN WITH DOOR CLOSED. WHEN OVEN IS COLD, REMOVE CAKE, LOOSEN SPRING FORM AND REFRIGERATE UNTIL COLD.
