Rediburger Delight

We attend a lot of potlucks, and I am always looking for one-pot dishes to serve. Also, I do daycare and homeschool, so I like quick and easy things.


one onion, chopped
two Tbsp olive oil
four white potatoes, peeled and diced into 1-inch chunks
two cups of frozen vegetables, such as peas, green beans, or mixed veggies
one can Loma Linda Rediburger, cut into 1-inch chunks.
one to two cups water, as needed
Vegesal seasoning, or other mixed season salt


Saute the onion in the olive oil until soft in a twelve inch frypan. I use a cast iron pan with a lid. Add the potato chunks and a cup of the water, cover and simmer ten minutes on low flame. Add the frozen veggies, the Rediburger, and sprinkle the Vegesal on top. Cover and simmer on low until potatoes are fork-soft, stirring once or twice and adding water if it gets dry.
