GRATIN DE MACARONI DEL BISTRO CAMPAGNE

THE AZZONE FAMILY FAVORITE. THIS IS THE BEST MACARONI AND CHEESE DINNER YOU EVER HAD. MY MOM USED TO SERVE THIS DISH WITH CHICKEN OR LEFT OVER TURKEY.

Ingredients

1/2 CUP OF SWISS CHEESE (GRATED)
1/2 CUP OF GRUYERE CHEESE (GRATED)
1/2 CUP MOZZARELLA CHEESE(GRATED)
1 CUP OF HEAVY CREAM
2 CUPS OF COOKED ELBOW MACARONI
1 PINCH OF NUTMEG
SALT & PEPPER TO TASTE
1 EGG YOKE
1/2 CUP OF GRATED PARMESAN CHEESE

Preparation

START BY GRATING ALL THE CHEESES. USE A LARGE SAUTE' PAN TO REDUCE THE CREAM BY HALF. THEN ADD THE FIRST THREE CHEESES, NUTMEG, SALT, PEPPER AND COOKED PASTA. STIR CONTINUOUSLY UNTIL ALL THE CHEESES ARE MELTED. REMOVE FROM HEAT AND STIR IN THE EGG YOKE. POUR THE MIXTURE INTO A BUTTERED BAKING PAN. SPRINKLE WITH PARMESAN CHEESE OVER THE TOP OF THE MIXTURE AND PLACE UNDER THE BROILER. SERVE BUBBLING HOT.
