German Potato Salad

A dear German friend of my Grandma shared this recipe with my dad's family. It quickly became a family favorite back then, and is now one with the next generation.

Ingredients

6-8 average-size potatoes
1 medium onion
3-4 T oil
3-4 T vinegar
salt and pepper to taste

Preparation

1. Boil potatoes in their skin until soft.
2. Chop onion.
3. Let potatoes sit in cold water until you can handle
them. Then the skins will peel off.
4. Slice potatoes and mix with remaining ingredients.
5. Add more vinegar, salt, and pepper to taste. Enjoy!
