Grandma's Cornbread

America, South: Brazil

Chewy bread is a favorite with my family and church. We don't need a special occasion to enjoy it, just a good excuse! The batter is as good as the cooked bread. Although they say now you shouldn't eat anything with a raw egg in it. This recipe was handed down, from my grandma, Vonnie Kate Sands Anderson. I have heard it called chewy cornbread. Although there is no corn meal in it.

1 pound box of brown sugar
3 eggs
2 cups of flour
2 sticks margarine or butter
1 cup chopped pecans
1 teaspoon vanilla flavoring

1. Cream butter and sugar
2. Add egg, and mix
3. Add one cup of flour, mix
4 Add egg, mix
5. Add 2nd cup of flour, mix
6. Add last egg
7. Add pecans and flavoring
8 Bake in PREHEATED 350 oven for 30 min.
