This Is a traditional recipe thet we use on a regular basis. This is one of the most popular puerto Rican recipes.
1 to 6 pounds of pork roast
1 clove of garlic
3/4 cups of bitter orange juice mixed with lime juice
1 teaspoon cumin
1 teaspoon black pepper
Trim the fat off of roast , mash garlic and salt and other ingriedients , rub all over meat and put in a bag with onions and refridgerate overnight. Bake in pan at 275 degrees for 5 to 6 hours. Then let set out 1 hour before carving
